Yom Kippur break fast is the best time all year to dive into the best Jewish deli foods around. That’s why egg salad is a common dish for the special occasion. Ingredients: 

· 4 Hardboiled Eggs, cooled, shelled and shredded 
· 15 Green Stuffed Olives, chopped into quarters 
· 1 teaspoon sugar 
· Salt and White Pepper 
· 4 tablespoons mayonnaise 

Preparation: 

In medium sized bowl, combine everything and mix well. Cover and refrigerate at least 2 hours before using. 

To Assemble Sandwich: Toast bread, put 1/4 cup egg salad on one piece of toast you have spread with mayonnaise, add 1 crisp lettuce leaf, top with second piece of toast you have spread with mayonnaise.
