Type
The Dalton Zinfandel grapes are planted on a small plot of land in Dalton’s Safsufa vineyards, located at the base of Mount Meron. Here, the grapes grow in a fairly cool climate with shade borrowed from the mountain, and in a soil made of stony, shallow red clay. The grapes, picked in early September, are fermented and pressed and then placed into new American barrels, where they age for one year.
Taste
The Dalton Zinfandel is medium-bodied with sweet fruit. It contains currant, berry, plum, and cinnamon tones, combined with low tannins and a taste of vanilla from the barrel, creating a very spicy taste. Dalton suggests this wine be served with heavy meat dishes, such as steak, lamb chops, or hearty winter stews.
Temperature
Suggested serving temperature is 61 – 64 degrees F.
